The Derby Punch, a light play on the famous Mint Julep from the Kentucky Derby, is fun and perfectly balanced. This simple recipe from Tria Restaurant, Bar & Event Center promises to deliver to a wide range of cocktail lovers.
Derby Punch for 20 people:
l - bottle of bourbon
½ - 750ml bottle of peach liqueur
40oz of cranberry syrup (see recipe at side)
4 - 12oz bottles or cans of ginger beer
30-40 mint leaves
Combine the bourbon, peach liqueur, and cranberry syrup in a large punch bowl or drink dispenser. Cut the limes into thin wheels, discarding the ends in the process. Add the wheels from 5 limes to the drink mix while setting the rest of the wheels aside for a later garnish. Slap the fresh mint leaves (to help release the flavorful oils) and add those to the drink mix as well. Stir together and refrigerate for 24-36 hours. After the refrigeration period, strain the mix to remove the limes and mint. The pith from the limes can turn the drink bitter if left in the mix too long.
At this point you can serve the drink or continue to refrigerate until the day of your event. Serve the drink in a 12oz glass over ice. Fill the glass a little over halfway with the mix. Top off with ginger beer (about 2oz). Give the drink a quick stir and garnish with a lime wheel on the rim. Cheers!

1 ½ oz bourbon
¾ oz peach liqueur
½ oz cranberry syrup
1 lime wedge squeezed
2-3 fresh mint leaves slapped
2 oz ginger beer
Build in a 12oz glass over ice. Stir all ingredients together and garnish with a lime wheel.
