Taking motivation from The Westin’s Eat Well philosophy and the SuperFoodsRX™ menu at The Westin Kansas City at Crown Center, Executive Chef Lee created a recipe to cultivate ‘food synergy.’ By pairing fresh ingredients, this dish increases nutritional value to energize guests for productive meetings ahead.
Chef Lee builds on familiar flavors of fish and citrus while blending the aromatic and exotic flavor of saffron in his Seared Sea Bass with Citrus Tomato Saffron Broth, Parsnip Mash, Wilted Spinach, and Leeks recipe. “This is a delicious summer option with a light citrus tomato broth that infuses the entire dish. The spinach and tomato broth is rich in vitamins and iron, providing a healthy alternative to heavy sauces,” expressed Chef Lee.
A similar dish will be offered on the summer menu coming to The Brasserie Restaurant at The Westin Kansas City at Crown Center. Chef Lee suggests pairing the dish with a Sauvignon Blanc.
